Tonight’s Dinner

Tonight’s dinner – On the fly, very simple. My philosophy: A really great meal takes longer to eat than to make.

1/2 chicken breast (this was baked ahead of time with some seasoning on it – no added fat)
1 small zucchini
1/2 cup garbanzo beans (mine were prepared from dried, so if using canned, then rinse well)
1/4 egg plant, peeled, cubed
Small bunch of cilantro
1/4 avocado
1 cup fresh spinach
1/2 cup romaine lettuce
Less than 1/4 cup shredded cheddar cheese

Sautee egg plant, zucchini, chicken, cilantro, and garbanzo beans until egg plant and zucchini browned – I used a dry pan – didn’t add fat.

Put on the spinach and lettuce. Sprinkle cheese and add avocado.

Yummy!! I didn’t even add salt or pepper. The egg plant and cilantro add a lot of flavor just themselves.
