Meatastic Meatballs

Grace named this dish. This is from my Kids Cook For You cooking class held Tuesday, December 30, 2008. My kids and I made it again today, along with our neighbor Anna. It’s quick and easy…and super kid friendly. DELICIOUS!!

1 package of ground *turkey approx. 1.5 lbs
¼ medium onion (cut into fourths – to add to food processor)
1 medium carrot (chopped – to add to food processor)
2 stalks medium celery (chopped – to add to food processor)
¼ cup walnuts
1 teaspoon ground black pepper
1-1/2 teaspoons oregano
½ teaspoon salt
1 tablespoon red pepper olive oil (can use plain olive oil)
2 eggs
¼ cup regular oats
1/3 cup parmesan cheese
1-1/2 cups of marinara sauce
6 cloves of garlic (crushed)

Directions
Combine walnuts, garlic, onion, celery, pepper, oregano, salt, olive oil in food processor and grind into a “paste.”

Add eggs to a bowl and mix with fork. Add veggie & spice paste and mix with fork. Add *turkey, oats and parmesan cheese. Mix together with hands and roll into meatballs. Drizzle marinara sauce over the meatballs.

Cook in oven at 350 degrees for approximately 1 hour.

I served with green beans and cucumbers.

*Can use any preferred ground meat. Turkey is low in fat and calories and is my nutrition preference.
